The Cornucopia Café

The Cornucopia Café will serve a fresh menu centered around local food, featuring breakfast, lunch and dinner daily. We’ve gathered our favorite recipes into a scrumptious selection of quiche, panini, fresh pasta, soup, salad and stir-fry, and included a bar with beer, wine and homemade sodas. Visit the to-go counter for specialty coffee and food to take along on your morning commute, or for a satisfying mid-day pick-me-up.

Culinary Apprenticeship Program

Fronterra Resources: Savage River Lodge & The Cornucopia Café has been selected by the state of Maryland and the National Restaurant Association to be an educator and trainer for their new hospitality apprenticeship programs. The program is certificate based and  apprentices participate in a competency-based program involving on-the-job training and traditional classroom work.

As each skill and competency is mastered, apprentices advance in the program until all competencies are documented and completed. Depending on the ability, experience of the apprentice, and the number of hours worked the program takes approximately two years to complete.

  • Line cook - 1 year

  • Kitchen supervisor – 18 months

  • Restaurant Manager – 2 years

In conjunction with the National Restaurant Association, the state of Maryland is offering full scholarships for the line cook training through Fronterra Resources. We are also able to offer the kitchen supervisor and restaurant manager tracts. Scholarships are available for all, with a heavy emphasis on line cook.

We are offering this program at both of our restaurants, Savage River Lodge and The Cornucopia Café, led by our Certified Executive Chef Martin Galloway. Martin is the only CEC in Western Maryland.

This is an excellent opportunity for students to receive a free trade certification while being paid a regular wage, with increases skill-based upon the competency levels of the program.
